Peach Pizza Recipe from Myke’s Pizza

If you’re craving pizza, peaches probably aren’t the first topping that comes to mind. But you might want to reconsider. Myke Olsen of Myke’s Pizza has served up a recipe for peach pizza that you can easily make at home. Since peaches are in season, you won’t have any trouble finding them in your local supermarket, Olsen says. “They’ll be pretty tasty if you give them time to ripen.”

Olsen doesn’t include pizza dough in his recipe, but suggests checking your favorite food website to find one. You can also pick up ready-made pizza dough at Trader Joe’s and other grocery stores.

Peach pizza will be on Myke’s menu until the beginning of October. The pizzeria is located inside Cider Corps in Mesa.

Peach Pizza

Toppings 

2 oz. Gouda, grated
2 oz. low moisture mozzarella, grated
4 oz. fresh mozzarella, torn into quarter-sized pieces
1 fresh peach
Fresh sage
Pistachios
Pizza dough

 Preparation  

  • Preheat oven to 500 degrees.
  • Cut peach in half and remove the pit, then slice into ¼ inch slices. Note: Frozen peaches can also be defrosted and used.
  • Prepare crispy sage by removing leaves from stem of sage pieces. Heat a small amount of oil in a Dutch oven or skillet over medium-high heat. Add the sage leaves to the oil and cook quickly until bubbling of oil slows. Remove leaves and place on paper towels to drain excess oil.
  • Rough chop pistachios.
  • Stretch out pizza dough.
  • Break up mozzarella and gouda cheeses into chunks and scatter over pizza.
  • Add peaches.
  • Cook for 5 minutes, rotate a half turn and cook for another 5 minutes or until the crust has browned.
  • Remove pizza from oven, add pistachios and crispy sage and serve.
