I think it’s safe to say that desert dwellers are always looking for ways to cool off, especially this week. With temperatures hovering around 115 degrees, we thought it might be a good time to share a refreshing cocktail from Culinary Dropout. The crowning touch, Ron Zacapa 23 rum from Guatemala, sends this drink into nirvana territory.

Enjoy this rum cocktail poolside, or visit Culinary Dropout and sip along with an order of beer-battered fish and chips or a soft pretzel dipped in provolone fondue. Stay cool out there.

Cuban Link cocktail

5 mint leaves
0.75 oz. fresh lime juice
1 oz. Coconut Real (cream of coconut)
2 oz. Havana Club Anejo Blanco Rum
0.5 oz. Ron Zacapa 23-Year Rum
2 oz. club soda

Combine the first four ingredients in a shaker, shake hard, add club soda and strain tightly. Pour into a Collins glass and add the Ron Zacapa — or aged rum of choice— float. Optional: Garnish with two mint sprigs, lime wheel and coconut shavings.
