Recipe Friday: Fairytale Brownies Moonfetti Pies

Moonfetti Pies
8 original Fairytale Brownies
From-scratch or store-bought marshmallow fluff
2 lbs. dark dipping chocolate (Ghirardelli is recommended)
Colored sprinkles (found in the ice cream or baking aisle) for dipping
From-scratch or store-bought caramel sauce, for saucing plate
Additional marshmallow fluff for garnishing

Preparation

  • Place four brownies top-side down on work surface. Use a spoon to place marshmallow fluff on center and spread it around. Top with another brownie. Wrap each “pie” tightly in plastic wrap and freeze for at least 1 hour.
  • After the sandwiches have had time to freeze, place the dipping chocolate in a microwave proof bowl and melt according to manufacturer’s instructions.
    Remove “pies” from the freezer. Remove the plastic wrap. Dip each pie in the melted chocolate, gently shake the pie over the bowl to remove excess. Place pie on a Silpat non-stick baking mat or parchment lined sheet pan. Immediately sprinkle the pies with the colored sprinkles. Allow to cool completely in the refrigerator.
  • To serve, place a small scoop of marshmallow fluff in the middle of each dessert plate. Drizzle with caramel sauce. Place the Moonfetti Pie in the center of the plate and sprinkle with additional sprinkles. Serve. Encourage guests to have fun by eating the pies like we did as kids — with their hands.
