July is National Corn Month! What’s your favorite maíz dish?

“I had the first masa quesadilla of my life at La Santisma Gourmet Taco Shop about a decade ago and it’s still the best I’ve ever tasted: alternately gooey and bready, filled with hot, luscious carnitas. Sadly, the place burnt down in 2025. Hoping they make it back!”

— Craig Outhier, editor

“I love corn in any form! From crunchy chancla at El Chullo to creamy elote at Tacos Chiwas, I can’t get enough. And grits! Love the jalapeño-cheddar grits at Little Miss BBQ and the dreamy shrimp and grits at Buck & Rider.”

— Leah LeMoine, managing editor

“I’ve gotta go with the Green Corn & Cream Cheese tamale from The Tamale Store. It’s got rich, creamy cream cheese, sweet pops of corn kernels, and New Mexican Hatch green chiles all mingling for the perfect balance of comfort and zing! I can’t ever seem to get enough!”

— Mirelle Inglefield, art director

“I was very impressed with the pan de elote from Sānto Agavē. It is their Mexican Sweet Corn Cake with a little scoop of butter on top. I have never had anything like this before and I am HERE FOR IT! ”

— Angelina Aragon, managing art director

“I can’t believe no one picked the Corn Creme Brûlée from Steak 44. It’s easily the greatest side dish in steakhouse history.”

— Matthew Johnson, director of digital content
