Former corporate banker Enrique Uresti opened S.A.L.T (Sea and Land Tacos) in 2021. Uresti incorporates chicken and pork as well as a wide array of seafood such as fresh fish, shrimp and octopus, which he will be showcasing at Dish Fest on Sunday, March 17.
What is the origin story of your Best Dish?
I’ve always had a love for seafood tacos, especially octopus, despite not growing up in a beach town where it’s commonly found. In my experience, octopus dishes tend to be associated with high-end restaurants and come with a hefty price tag… I believe that everyone should have the opportunity to enjoy this delicious seafood without breaking the bank. Tacos are beloved for their accessibility and versatility, making them the perfect vessel to showcase octopus in a more affordable and approachable way.
What made you choose it for Dish Fest?
The love for octopus with the accessibility and casual appeal of tacos is a creative way to introduce more people to this delicious seafood delicacy.
What is your preferred atmosphere when cooking? Do you like to listen to music or do you need minimal distractions?
Music is what gets me inspired.
What are you most looking forward to about Dish Fest?
Meeting new chefs, getting inspired by other dishes and showing people my product.
