
Contrary to the name, this breezy riff on a classic margarita is not an especially intense cocktail. Composed of jalapeño-infused Herradura Blanco Silver Tequila, strawberry simple syrup and fresh lime, it’s zingy but quaffable, a perfect après-golf, poolside sipper. The name is actually a pun on Sheriff Joe Arpaio’s erstwhile Tent City and its infamous punitive pink underwear. But forget the clink and consider the drink, offering a whiff of vegetal jalapeño, a rim of Himalayan black salt and a nibble a of dehydrated strawberry chips.
If like so many of us you’re under house arrest, fill a cocktail shaker with ice, add 1 ½ oz. jalapeño-infused tequila*, ¾ oz. strawberry simple syrup** and ¾ oz. fresh lime juice. Shake and strain over ice, rimming the glass with Himalayan black salt and garnishing with a jalapeño slice and strawberries (dehydrated or otherwise). Unlike Arpaio’s jailbirds, the color will suit you.
*Cut three jalapeños in long slivers and add to a 750-ml. bottle of tequila for at least 24 hours. The longer the steep, the spicier the booze.
**Mix 1 cup water and 1 cup sugar in a saucepan. Add 1 cup de-stemmed and blended strawberries to mixture and stew on medium-low heat for 25 minutes. Strain and refrigerate.
