On Friday, Proof Canteen Shrimp GritsAug. 31 and Saturday, Sept. 1, Proof will borrow from the great southern low country tradition of mixing seafood, sausage, and potatoes in a single dish. Proof’s own low country boil combines lobster tail, mussels, house-made sausage, new potatoes, and corn on the cob along with a drop biscuit.
