We’re loco for Casa Añejo’s sophisticated riff on the piña colada.
If drinking piña coladas and getting caught in the rain has become a bit too “been there, done that” for your liking – well, you’re in luck. There are very few cocktails more overdue for a facelift than this boozy cliché of the fun-in-the-sun set.
One of our favorite new-look coladas: this herbaceous sipper from Phoenix cantina Casa Añejo. The makeover includes a shot of high-octane green Chartreuse, a 300-year-old aperitif made by French monks, which gives the cocktail’s cloying combination of pineapple and coconut some much-needed herbal complexity. Meanwhile, the rum is swapped out for blanco tequila, which stands up better to the Chartreuse.
In a shaking tin, combine 11/2 oz. green Chartreuse with 1/2 oz. Patron Silver, 3/4 oz. lime juice, 11/2 oz. pineapple juice, and 1 oz. coconut cream. Shake with crushed ice and pour into a Poco Grande glass. Garnish with a single pineapple leaf and pray for a rainstorm.
