Scottish whiskey-makers jokingly refer to the little bit of alcohol that evaporates during the distilling process as the “angel’s share.” With Don Q Añejo, God’s messengers apparently get really tipsy. Aged in oak barrels, about 10 percent of the Puerto Rican rum is lost to the heavens during processing.
What remains is a smooth and dark potion that’s the base of the Puerto Rican Switchblade, a simple three-ingredient cocktail concocted by Honor Amongst Thieves bar manager Lyndsi Hastings. To make your own, combine 1 ½ oz. Don Q, ½ oz. banana liqueur and ¼ oz. Cappelletti Sfumato Rabarbaro Amaro in a mixer. Stir well (don’t shake!) and pour into an old fashioned glass. Add a jumbo ice cube and dust with ground cinnamon to bring out the drink’s subtle cherry flavor.
