Sweet Potato Nachos

Ingredients

  • 2–3 sweet potatoes, washed and dried
  • Olive oil
  • Salt and pepper
  • 1 lb. Sun Harvest organic ground beef, 93% lean
  • First Street Taco Seasoning
  • 1 cup First Street Mexican cheese blend
  • Tomatoes, sliced
  • Avocado, sliced
  • Red onion, sliced
  • Jalapeños, sliced
  • Lime wedges
  • First Street Original Sour Cream

Directions

  1. Preheat oven to 400°F. Line a few baking sheets with parchment paper. Slice sweet potatoes into ¼-inch thick rounds and season with salt and pepper. Spray both sides with olive oil. Place rounds on parchment paper, spacing out the slices so they are barely touching. Bake for 15 minutes, flipping halfway through.
  2. Meanwhile, brown ground beef and season with 1–2 tablespoons taco seasoning and ¼ cup water. Set heat to low.
  3. To assemble, combine sweet potatoes onto one baking sheet. Add ground beef evenly on top. Sprinkle with cheese and bake at 400°F for about 3 minutes, or until cheese is melted. Garnish with tomatoes, avocado, red onion, jalapeños, lime, cilantro, and a scoop of sour cream. Serve immediately.
