The name alone should tell you this is no ordinary destination to order street food in Phoenix. Random AF Taqueria creates the best quesabirrias (beef folded into a tortilla with melted cheese and served with a side of consommé for dipping) in the Valley, according to the food truck’s founder Enrique Sanchez Garcia. We chatted with Garcia to get the scoop on his famously random recipes and why presentation is paramount. Come try his quesabirria at Dish Fest to find out for yourself.
What is the origin story of your Best Dish?
Our quesabirrias are the best ones is the Valley. After going out and trying different flavors in Phoenix and LA, we decided to make ours with perfection.
What are the most important elements of a Best Dish?
Most important element is presentation, after that is taste and texture. Everyone is very visual, you eat with your eyes first and then with your mouth.
What is your favorite food memory?
My favorite food memory is when my mother would make us different tacos on very different occasions in Mexico, handmade tortillas and wood-fired food like the old days.
Who is a fellow chef or restaurateur that you admire?
I think I admire everyone who’s is starting from the bottom and regardless of how hard it gets in the industry, they are still pushing through. I know many food truckers and chefs who almost gave up, but yet they are still in the battle to make Phoenix the best city with the best tasting food out there.
What are you most looking forward to about Dish Fest?
I’m looking forward to amaze everyone with the best tacos that they have ever had. They are addicting.
