The F&A Veg Board at Federal Pizza helps alleviate gluttonous guilt over too much pizza, wings and beer.
Upward Projects co-founder and CEO Lauren Bailey delights in telling the story of how the F&A Veg Board ($13.50) ended up on Federal Pizza’s menu. During the pizzeria’s menu-writing phase, Bailey went to dinner at the home of her friends Frank and Anu LoVecchio, who lived down the street from the soon-to-open restaurant.
The couple had stretched brown butcher paper across the kitchen island and loaded it with roasted vegetables. While everyone was cutting off pieces of cauliflower and grabbing other vegetables, Bailey had an epiphany. “This would be a great accompaniment if you’re [feeling] kind of guilty eating pizza and wings and pasta. You could start with this amazingly delicious vegetable board.”
Named in honor of Bailey’s dinner party pals, Federal Pizza’s colorful veg board is draped with al dente stalks of wood-fired broccolini, hunks of charred cauliflower, slender fire-kissed carrots, and braised and sautéed fennel along with a knot of irresistible flash-fried fingerling potatoes scattered with shredded Parmesan cheese. For dipping, the kitchen whips up an enticing Calabrian chile-flecked Romesco sauce thick with sweet Marcona almonds, Parmesan cheese and olive oil. While the nutty sauce almost steals the show, the wood-fired vegetables are the unquestioned stars – and the selection never changes, Bailey says. “We really like the combination, and we can get good quality year-round.”
