Recipe Friday: Chompie's Fitness Omelet

To raise awareness and funds during September’s Childhood Cancer Awareness Month, Chompie’s is partnering with Singleton Moms, an Arizona-based nonprofit organization that supports single-parent families affected by cancer.

During September, Chompie’s will donate $1 to Singleton Moms from each entrée ordered from the deli’s special three-item menu, which includes Josh’s Whole Grain French Toast, Classic Grandpa Ruby’s Reuben and the Fitness Omelet.

Throughout the year, Chompie’s also makes a donation for every kid’s meal sold at the restaurant’s five locations, says Frank Lara, Chompie’s head of operations.

Chompie’s is sharing the recipe for the Fitness Omelet so that you can make it at home, but don’t let that stop you from dining at the deli where your purchase will help single parents facing cancer. Plus, you can also enjoy a freshly baked, warm bagel while you’re there (no one wants to make a bagel at home).

Fitness Omelet
6 oz. egg whites (about 3 egg whites)
2 oz. diced turkey
½ oz. fresh spinach
½ oz. sliced mushrooms
½ oz. green chilis
½ oz. diced tomato
½ oz. shredded Parmesan

Spray pan with no-stick cooking spray. Except for the egg whites, sauté all ingredients together. Add egg whites and cook well. Fold over and serve.
