Wildly flavorful Filipino cuisine isn’t necessarily a bastion of healthy eats, but Pamela Lourdes Loch figured out how to honor her roots without all the lechon (fried pork) and lumpia (fried pork eggrolls). Inspired by her mother’s personal recipe, Little Rosie’s Filipino Dressing & Marinade includes all the traditional tastes of the Filipino kitchen – namely vinegar, soy sauce, garlic and a touch of sesame – blended with non-GMO, expeller-pressed canola oil. Loch’s website is chock-full of healthy recipes incorporating the slightly sweet, slightly salty dressing. Whether you use it to marinate chicken for tacos or toss it with cucumbers and green onions for a refreshing side salad, this versatile dressing enhances dozens of dishes, limited only by your imagination. Don’t be alarmed by the way the oil sits on top of the soy-vinegar base; the dressing simply doesn’t contain extra emulsifiers to keep it from separating. Loch pours the oil on top as the final step in production. Just give it a good shake before you use it. Find Little Rosie’s at AJ’s Fine Foods or order online (Original and Spicy, $10).
