Few acts of culinary expression feel as uniquely American as grilling up weenies at a mid-summer barbecue. We probably owe Germany a debt for inventing the sausage, but first let us give thanks to Chandler’s charcuterie entrepreneurs at The Proper Beast for giving us one of the most Arizonan franks you’ll ever taste: a beer-soaked bratwurst made with ultra-hoppy, American-style IPA. Dubbed the On A Bender Bratwurst, the wiener is anchored by Arizona family-raised pork from The Meat Shop in Downtown Phoenix, and enhanced with Refuge IPA beer from Gilbert’s world-famous Arizona Wilderness Brewing Co., a canned brew we featured on this very page back in January.
Owners Brian Hines and Thom Barbour spruce up the all-natural sausage blend with orange zest, coriander and garlic. The citrusy and berry-like flavors of the hops lend a flavor that beer drinkers love, they say. Aside from simply grilling the links up, the duo recommends getting the brat out of its casing to cook and crumble onto a barbecue pizza, fold into an omelet, or shape into burger patties.
