Can’t make it to South America this summer? Join celebrity chef Richard Sandoval at his pan-Latin fusion eatery instead. A six-buck rum punch uses tropical guava to jet-setting effect, and should be ordered with happy hour carnitas nachos ($10), towering over a bed of black beans and studded with tangy Fresno peppers, cool crema and plenty of guac; or crispy calamari ($8), served with zippy ginger-scallion sauce. The happy hour menu also includes gourmet bar tacos (two for $6). Painted with salty-sweet hoisin sauce, the barbacoa will satisfy any meat craving, but nothing turns a staycation into a vacation like delicately battered fish tacos, enlivened with copious scoops of caramelized pineapple, fresh red onion and a Peruvian version of salsa verde. M-Su 2:30-5 p.m.

imagined from industry classics. Popcorn gets lightly dusted with salt and vinegar powder, pickles are brined in-house from rotating seasonal vegetables, meaty olives are smoked and slightly charred by the fire, and mixed nuts are salted and candied with restraint. Wash them down with a brisk Moscow mule ($7) straight from the tap, expertly pre-made in batches with AZ Distilling Co.’s Mission Vodka, molasses, turbinado sugars, and fresh lemon juice and ginger, which make all the difference. M-Su 4-6 p.m.

The Montelucia is a little slice of coastal Spain, transplanted in the Valley with some of the finest views of Camelback Mountain that your happy hour budget can buy. Glide past the resort’s signature courtyard to MBar and its Mediterranean take on a vesper cocktail, the Fixation ($6), made with lemon gin, fig vodka and sweet white vermouth. Snack on a board of mixed Spanish meats and cheeses ($16), starring slightly sharp Manchego; smoky, rich and buttery Galician San Simón; pungent Cabrales; and an assortment of prosciuttos and salamis. The filet mignon pinchos, or skewers, will fill you up, but the roasted cauliflower salad ($10) with granola and a light vinaigrette will leave you feeling lighter on your feet and ready to tango. M-Su 3-5 p.m. and 10 p.m.-12 a.m.
