“Build it and they will dine,” Valley restaurateur Sam Fox must have been thinking. In 2011, the Fox Restaurant Concepts brand broke out of its comfortable niche in Scottsdale and entered the then-emerging Downtown Phoenix market. First dibs at the CityScape development provided Fox with a choice 7,000-square-foot storefront for Arrogant Butcher, situated kitty-corner from Talking Stick Resort Arena and walking distance from Chase Field and the Orpheum Theatre. Equally well-suited for lunch and dinner, AB splits the difference at happy hour, offering discounted $4.50 domestic beer pints and pillowy pretzel rolls with gooey cheese fondue made from provolone ($7, down from $11). Fluffy zucchini fritters ($6), and party-size platters of nachos loaded with white beans and plenty of smoky, fall-apart carnitas ($9, down from $14) certainly beat break-the-bank peanuts and hot dogs at the ballpark. 3-6 p.m. M-F

Possibly the best compliment one can give Fox’s successful North Italia is that it doesn’t feel like the regional chain restaurant that it became after making its Valley debut back in 2002. Though new locations are scattered across Southern California, Texas, Colorado and Kansas, neither the Scottsdale nor Arcadia eateries have gone to seed. At happy hour, grab a $4 glass of whichever house wine is being poured, a bowl of binge-able, fried zucchini chips ($3, down from $7), and one of the best chef’s boards in town ($10, down from $16), loaded up with freshly grilled bread, stone fruit chutney, prosciutto, cheese and grilled asparagus drizzled with balsamic vinegar. Unlike many HH programs, in addition to drinks and hors d’oeuvres, North boasts an entree – and a shareable one, at that. It’s no stretch to say that Arrogant Butcher took many of its most identifiable qualities from Olive & Ivy, becoming a sort of Phoenix outpost of the popular Scottsdale Waterfront restaurant. Olive & Ivy does a little bit of everything inside its spacious, luxurious location – perfect for staging large parties alongside important business dinners, family nights out, and intimate dinners for two. Happy hour here is built for snacking. Sit at the bar and order a $5 beer to go with signature truffle fries ($5) and some two-buck-off tender lamb meatballs, served with cool and creamy tzatziki yogurt sauce. To finish the meal, go for one of the many bruschetta options (3 orders for $10; normally $13), such as tangy quince and spicy Spanish chorizo, or mushrooms scattered atop creamy crescenza cheese and garlic. 3-6 p.m. M-F
