Gin lovers: Celebrate World Gin Day on June 9 with the Violation, a twist on the classic Aviation, from Pitch.

photo by Rob BallardGin-lovers, mark your calendars: June 9 is World Gin Day – a great excuse to enjoy this fresh and floral yet complex spirit, which plays remarkably well with others.

Gin’s botanical notes come to life especially well in classic cocktails such as the Last Word and the Aviation – the latter a rediscovered pre-Prohibition cocktail that took flight (again) about a decade ago. At Pitch in Scottsdale, the classic Aviation recipe – gin, Crème de Violette, maraschino liqueur and lemon juice – is gently tweaked to become the Violation, made with handcrafted No. 209 Gin (citrus-forward, with subtle juniper notes and a floral background) from San Francisco’s Distillery No. 209. Served up in a coupe glass, the elegant and frankly feminine result is a lovely, lavender-hued sipper with a lush, almost velvety finish.

It’s also super easy to make. Just pour 1 ½ oz. of No. 209 Gin, ¾ oz. Crème de Violette, ¼ oz. fresh lime juice and a dash of simple syrup into a cocktail shaker, adding ice and shaking vigorously until chilled. Using a Hawthorne strainer over the top of the shaker and a small mesh strainer held above the coupe, double-strain the mixture to remove any ice shards. Ladies and gentlemen, we’re cleared for takeoff.
