The Dead Hand

None of these things is possible when you’ve got a dead hand — but all are highly likely after drinking The Dead Hand cocktail, mixed by surgeon-steady Clever Koi mixologists. Belying its moribund name, this lively elixir of blackberry, tequila, citrus and almond will brighten your winter tippling.
At the bottom of a tall glass, muddle blackberries and fresh sage. Add 1/2 oz. each of Bénédictine herbal liqueur, Giffard almond syrup and lemon juice. Load the glass with crushed ice and add 1 1/2 oz. floral Arette Blanco Tequila. Float 1 oz. grapefruit juice and a few dashes of Pernod on top. Garnish with fresh blackberries and sage. Sprinkle with fennel pollen, and wait for the applause and backslaps to begin.
