In October 1871, one of the most notorious fires in history swept through Chicago, wiping out most of the town’s wooden buildings over the course of two days. No one knows for sure how the blaze began. Rumors credited everything from a klutzy cow to a rogue meteor.

55 Chicago pays homage to the Windy City’s sooty past with the Great Chicago Fire, a spicy mule that ends with a slow, lingering burn. Start by combining 1 ½ oz.

CaskWerks Apple Pie Liqueur (distilled here in the Valley), ½ oz. Nuestra mezcal, three drops of Serrano Cocktail Spice (chile-based bitters) and ½ oz. lemon juice in a standard shaker. Stir with a mixing spoon, then strain into a chilled metal mug filled with ice. Top with Royal Jamaican ginger beer and garnish with a dried red chile for added heat.
