Rye whiskey had its share of historical celebrity endorsements: George Washington distilled a wicked 140-proof version at Mount Vernon, and Old Overholt – one of the country’s oldest rye whiskey brands – was reportedly a favorite of Doc Holliday and Abraham Lincoln. The spicy spirit all but disappeared during Prohibition, only recently reemerging as a trendy cocktail base.

Sierra Bonita bar manager Ken Ennesser’s eye turned to rye after a self-diagnosed allergy took beer out of the picture. His gluten-free cocktail starts with 1 1/2 oz. Bulleit Rye Whiskey and 1/2 oz. St. Germain elderflower liqueur poured over a Luxardo maraschino cherry and orange slice. Muddle, then add ice and shake. Top with 3 oz. each ginger beer and San Pellegrino sparkling orangeade. If you share the Founding Fathers’ preference for unsullied rye, Ennesser suggests reducing the sodas to just a splash and garnishing with orange peel.
