Summer Fruit Granitas

Makes 4 cups

Ingredients

1 pound of ripe blueberries, strawberries, cantaloupe or mangos
2/3 cup sugar
1 ½ cups water
2 tablespoons lemon or lime juice

Directions
1. Place your choice of fruit into a food processor and pulse until you have a rough purée. Put sugar and water into a small pot, stir for one minute, then place over medium heat. Bring to a boil and cook for one minute. Remove and let cool.

2. Mix together the fruit purée, sugar-water and lemon or lime juice. Mix well.

3. Pour mixture into a baking dish or metal pan so it is a half-inch from the bottom. Place flat in the freezer and let set for 45 minutes.

4. Using a fork, scrape the granita to start forming crystals. Place back in the freezer and let set for 30 minutes. Scrape again and repeat (two or three more times) until it is frozen and crystallized. Serve in a chilled glass.
