4-6 Servings
Ingredients:
1 pound of Penne pasta
1/2 pound caramelized onions
1/2 pound roasted peppers
1/2 pound fresh spinach
1/2 pound artichoke hearts
1/2 pound crumbled goat cheese
4 garlic cloves
1 cup extra virgin olive oil
(optional) grilled/sliced chicken
breast or sautéed shrimp

Method:
• Cook pasta to desired tenderness.
• In separate pan, sautée garlic and oil.
• Add caramelized onions, roasted peppers, fresh spinach, and artichoke hearts. Sautée for 3 –5 minutes.
• Add pasta, toss ingredients and top with crumbled goat cheese. (For extra flavor add grilled chicken or sautéed shrimp.)
• Enjoy with your favorite wine
