Fans of chef Peter DeRuvo were heartbroken to see him depart for Chicago when Davanti Enoteca closed up shop in 2013. But observant restaurant geeks spied him behind the counter at Pig & Pickle late last year, and true sleuths took note when the menu at one of Old Town’s favorite late-night hangouts abruptly DeRuvoized in late February. Now it’s official: DeRuvo has taken over the kitchen at Evo and is installing his own brand of bold, lusty Italian cuisine. He has added some sophisticated mains and an impressive array of antipasti, like a seared beef heart sandwich with Chicago-style giardiniera. The pastas are especially inspired, including a lightly truffled egg yolk raviolo with a saucy, carbonara-inspired condimento, and a slippery, uni-tinged tangle of delicate squid ink chitarra, gently enveloping lump crabmeat and slivered fresh chiles.
