YOU WON’T BELIEVE HOW fluffy– and utterly delicious – the handcrafted, corn-husked tamales from theTamale Store are. On the other hand, maybe you’ve already discovered them at one of our local farmers’ markets. It seems there is always a line at their market stalls.

Whether in Downtown Phoenix, Ahwatukee, Mesa or Scottsdale, people are clamoring for the plump bundles of joy. Tamale purists might take issue with these practically lighter-than-air treats because there is no lard or shortening involved in this version of a revered Mexican dish. It took owner Martha Pimienta, a veteran caterer and restaurant owner, months to tweak the traditional recipe and a few more months to tinker with the dozen or so delectable fillings, like the green chile and chicken, mushroom and cream cheese or the more traditional combinations of beef or pork with red chile.

The number of flavors is still growing, but you’ll find several savory meat and vegetarian options, plus a few sweet choices, like blueberry and cream cheese. If you can’t make it to one of the local farmers’ markets, call the Tamale Store and order a dozen or two to pick up. Just give them a couple days’ notice ($11 for six or $22 per dozen).
