Barrel-Aged Manhattan

Classic cocktails continue to experience a renaissance, and one of the finest representations is the barrel-aged Manhattan at Quiessence.

You probably won’t want to try this at home, but here’s how they do it: They combine 12 750-milliliter bottles of Wild Turkey, four bottles (same size) of Carpano Antica sweet vermouth and one 375-milliliter

bottle of Angostura bitters. The mixture sits for 24 hours, after which they pour it into used half-size French oak wine barrels, which lessens the alcohol burn on the palate and adds a bit of spice. It mellows for 90 days and is served straight up with Amarena cherries (imported from Italy) wrapped with candied orange peel.

This sultry sipper is seasonal – it’s only available from September until it runs out, around January.
